What I Ate For . . . Breakfast (London edit.)

Nothing beats the satisfaction of good old avocado on toast for breakfast on a summers morning. 

The cocktail of macronutrients means this simple yet satiating meal is nutritionally complete, and of course delicious! 

Whether you're a vegan or not, or maybe you're looking for breakfast inspiration, its always nice to incorporate more plant based meals into our diets.


You will need:

1/2 ripe avocado
1 Rye bread
1/2 lime (optional)
Pink Himalayan Salt (or any good quality sea salt)
Black Pepper

1) Chop up 1/2 an avocado into a small bowl, and mash using the back of a fork. Have the bread in a toaster toasting away meanwhile.

2) Once toasted, transfer the mashed avocado onto the toast and spread evenly over the toast.

3) Squeeze the juice of half a lime over the avocado.

4) Season with salt and pepper and serve immediately... Enjoy!
